Delicious eaten hot or cold, caillette is a small and tasty pressed-meat dish of pork and herbs.
Depending on the recipe, it can also contain spinach, chard, and/or cabbage.
Today the town of Chabeuil near Valence continues the caillette tradition by cooking up this tasty dish. What’s more, the 2013 caillette world champion, Bertrand Lancelevée, hails from Drôme. He runs classes where you can learn how to make it.
