Home-made row ham unique in France (trademark and model registered) : entirely boned, salted, spiced from the inside, resewn with a needle in its rind according to its very specific square shape. Then matured from 9 to 15 months in traditional dryers.
The choice of a high quality row material (grain-fed porks in a traditional breeding). The specific manufacturing process of « Carré de Picq » makes it a traditional product of a great flavour.
